Fresh Fruit Season starts!


Delicious Peach Crisp

I love this time of the year! There are fresh fruit stands around if you drive through the country, and some orchards and stores have a variety of summer fruits too.
My peaches weren't going to last long in the heat, so I decided to make some peach crisp.

I cut up about 7 peaches, leaving the skins on, and spread them evenly onto the bottom of a 9x13" glass baking pan.
 
Then for the topping, I mixed together 1 cup oatmeal (uncooked); 1/2 cup flour; 1/2 tsp. ginger; 1/2 tsp. cinnamon; 2 Tbsp. honey; and 1/2 a stick of butter until the mixture was crumbly.
Sprinkling this on top of the peaches, I was able to pop it in the oven for 20 minutes at 350 degrees and have some delicious peach crisp when it cooled.
 

 
Fresh Blueberry Freezer Jam

I also purchased a 5 lb. box of fresh blueberries when I bought the peaches!

Using my Ninja Food Processor, I pureed 2 cups of blueberries and stirred in 2 Tbsp. of instant (sugarless) pectin (found in the canning section). Using the batter scoops that my friend Sarah gave me for my birthday, I was able to fill some canning jars perfectly!

If you want to make your own Naturally Sweet Freezer Jam:
Puree 2 cups fruit for every 2 (8oz) half pint jars.
Add 2 Tbsp. of Ball Real Fruit Instant Pectin
Mix well.
Fill jars - leaving room at the top for mixture to expand.

Let jars sit on counter for 30 minutes and then freeze.

**If you ABSOLUTELY MUST add sugar or sweetener, you can add 2/3 cup in with the pectin. Depending on the fruit you choose though, it should be perfectly sweet enough on it's own.
